25lb bag of Hard Red Spring Wheat, high extraction bread flour. Organic, hard red spring wheat freshly stone milled. This is a strong, high extraction bread flour (protein 12-13%, ash content 1.2%). Never bleached, bromated, treated or enriched in any way. It is rich in color, boasting a delicious nutty wheat flavor.
Think boules, batards, country loaf, or however you fancy your freshly baked sourdough bread.
