Ruth is a Bread Lab variety of hard red spring wheat well adapted for growing organically on our family farm. This is a mid protein, high extraction, stone milled flour rich in a golden flavor and caramel color—the color of hard red wheat. Think artisan loaves, baguettes, pasta, hearty cookies and muffins.

Never enriched, bleached, bromated, or treated in any way.
